Here's what I understand re: variance. Pure math lays out a sequence of rolls according to the expected outcomes, based on the 36 possible combinations of numbers by 2 dice, each w/ 6 faces, 1-6 over an infinite series of rolls. Rolling two dice with 6 sides each will give you a result within the range of 2-12, that averages to 7. (2+12)/2 = 7.
